- 1kilograms large washed white potatoes
- 2/3 cup prepared gravy
- 120grams havarti cheese, chopped or coarsely grated
- 1L vegetable oil
Description
Poutine's cousin from the USA, disco chips are loaded with gravy and cheese. A moreish snack to serve at your next gathering.
Method
Step 1 of 3
Cut potatoes into long 1.5cm-thick chips. Pat dry with a clean tea towel. Heat oil in a saucepan over medium-high heat. Test by dropping one chip into the oil; it should sizzle immediately.
Step 2 of 3
Line an oven tray with a paper towel and place a wire rack on top. Preheat oven to 180°C. Cook chips in oil in 3-4 batches, for 7-8 minutes each batch, until crisp and golden (see tip). Using a slotted spoon, transfer them to the rack and keep warm in the oven. Repeat with remaining chips, ensuring the oil has reheated sufficiently between each batch.
Step 3 of 3
Top chips with cheese and return to the oven for 3 minutes until cheese has softened. Meanwhile, heat the gravy, pour over chips and serve immediately.
