  • 250grams potatoes, peeled, raw, grated
  • 1 1/4 cup buttermilk
  • 2tablespoons butter
  • 2tablespoons canola oil

Description

Traditional Irish boxty can be served stuffed with a creamy filling for a main meal or like a pancake for breakfast with bacon.

Method

Step 1 of 3

Place the raw potato in a clean tea towel, roll up tightly and wring out any excess moisture over the sink. Add to a bowl and stir in the flour, bicarbonate of soda and mashed potatoes.

Step 2 of 3

Stir in the buttermilk to make a thick batter and season.

Step 3 of 3

Heat the butter and oil in a large pan on medium heat and add ladles of batter to the pan. Cook for 3 minutes on each side, until golden and repeat with the remaining batter.
