  • 2 free-range eggs
  • 200milliliter milk
  • 1 pinch salt
  • 1 pinch pepper
  • 125grams plain flour
  • 50grams melted butter
  • 250grams Christmas ham, thinly sliced
  • 8 button mushrooms, thinly sliced
  • 2 cups baby spinach
  • 75grams Gruyere cheese, grated
  • 75grams sharp cheddar, grated

Method

Step 1 of 3

Place the eggs, milk and salt in a large bowl and whisk to combine. Whisking continuously, slowly add the flour, whisking until a smooth batter forms. Cover, then leave to rest at room temperature for 2 hours before cooking.

Step 2 of 3

Preheat oven to 200°C. Lightly butter a large baking tray (35cmx24cm). Pour in half batter and top with half of the ham, mushrooms, baby spinach, gruyere and cheddar cheese. Place in the oven for 12 minutes or until cooked.

Step 3 of 3

Repeat with the remaining ingredients. Season generously and serve immediately.
