- 1/4 cup plain flour
- 3 spring onions, finely chopped
- 800grams leftover roast potatoes, chopped (see Garlic & oregano hasselback potatoes recipe)
- 150grams leftover leg ham, chopped (see Passionfruit glazed ham recipe)
- 3teaspoons dijon mustard
- rocket salad mix (and lemon wedges, to serve)
- 1 free range egg, lightly beaten
- 1tablespoons thyme, chopped
- 1tablespoons rosemary
- oil (for shallow frying)
Method
Step 1 of 3
Roughly mash potato. Add ham, onion, herbs, mustard and egg. Season to taste and stir to combine. With damp hands, shape into 12 patties. Lightly coat with flour.
Step 2 of 3
Heat about 2cm oil in a frying pan over medium heat. Cook patties, in batches, for 3 minutes on each side or until golden. Transfer to a plate lined with paper towel.
Step 3 of 3
Serve patties with salad mix and lemon wedges.
