- 234grams Woolworths light fruit cake
- 5milliliter extra virgin olive oil cooking spray
- 500grams burnt caramel ice-cream
- 2 cups espresso
- 1 cups cherries
Description
This scrumptious toasted fruit cake, served with creamy burnt caramel ice-cream and hot espresso, will become the talk of the table at any dinner party.

Method
Step 1 of 2
Cut fruit cake into 1cm-thick slices, then cut in half lengthwise. Spray with oil. Heat a large non-stick frying pan over medium-high heat. Cook cake, in batches, for 1 minute each side or until golden-brown.
Step 2 of 2
Place ice-cream in serving glasses. Pour coffee over ice-cream. Top with fruit cake and cherries. Serve.
