- 6 mini flour tortillas
- 1/2 cup tomato paste
- 1 cup shredded mozzarella
- 200grams leg ham, chopped
- 6 eggs
- 1/4 cup sriracha
- 100grams Sweet Solanato® tomatoes, sliced
- 2 spring onions, sliced
- 1/4 bunch coriander, leaves picked
- 1 lime, cut into wedges

Description
These irresistible ham, sriracha and egg Mexican tostadas are perfect for any occasion and packed with flavours. This budget-friendly recipe makes the most of leftovers in your fridge.
Instruction tip
Swap tip:Sriracha is a chilli sauce, and it has a bit of heat. You can use tomato or chipotle sauce if you prefer.
Method
Step 1 of 3
Preheat oven to 200°C/180°C fan-forced. Grease and line 2 baking trays with baking paper. Heat oil in a large frying pan over medium-high heat. Cook tortillas, in batches, for 1 minute each side or until golden-brown. Place on prepared trays.
Step 2 of 3
Spread tortillas with paste. Top with half of the mozzarella, then top with ham, leaving an indent at the centre. Crack an egg into each indent on top of tortillas. Sprinkle with remaining mozzarella. Bake for 12-15 minutes for medium yolk or until cooked to your liking.
Step 3 of 3
Drizzle tortillas with sriracha. Top with tomato and onion. Sprinkle with coriander. Serve with lime wedges.
