  • 1 punnet chives, finely chopped

  • 600grams shortcut bacon rashers, diced
  • 8 spinach & herb wraps
  • 60grams baby spinach leaves
  • 1 red onion, thinly sliced
  • 2/3 cup barbecue sauce

Description

Get organised for Christmas brunch and make these delicious prep-ahead brekkie burritos with egg, crispy bacon, spinach, red onion and barbecue sauce. Simply reheat when you're ready to eat.

You can make and freeze these burritos up to a week ahead.

Method

Step 1 of 4

Combine eggs, milk, cheese and chives in a bowl and whisk lightly. Season. Pour egg mixture into a deep non-stick frying pan over medium-low heat. Cook, scraping in from the edges occasionally, for 6-8 minutes or until just set.

Step 2 of 4

Meanwhile, heat oil in a frying pan over medium heat. Add bacon and cook, stirring, for 5 minutes or until crispy.

Step 3 of 4

Fill wraps with egg, bacon, spinach, onion and half of the sauce. Wrap in aluminium foil. Freeze until ready to heat and serve.

Step 4 of 4

To reheat, preheat oven to 200°C/180°C fan-forced. Place burritos on a large baking tray. Bake for 20 minutes, or until heated through. Serve with remaining sauce.
