  • 8 crumpets
  • 125grams raspberries

Description

Elevate this brunch classic to superfood status with bioactive Manuka honey and nourishing bananas and berries.

Method

Step 1 of 3

Place 1/2 cup banana in a large bowl. Mash until smooth. Add eggs, milk, cinnamon and 1 tsp honey. Whisk until combined.

Step 2 of 3

Heat half of the butter in a large frying pan over medium heat. Working one at a time, dip half of the crumpets into egg mixture and fry for 2 minutes each side or until golden. Repeat with remaining butter, crumpets and egg mixture.

Step 3 of 3

Divide crumpets among serving plates. Top with raspberries and remaining banana. Drizzle with remaining honey. Serve.
