- 200grams fresh paneer, roughly chopped (Indian cheese or feta cheese)
- 3tablespoons red onion, finely chopped
- 1 green chilli, deseeded and finely sliced
- 1 handful fresh coriander, finely chopped
- 150grams baby plum tomatoes, quartered
- 2tablespoons extra virgin olive oil
- 1 lime, juice and finely grated zest
- 12 slices ciabatta bread
- 1 pinch salt
- 1 pinch pepper

Method
Step 1 of 2
Place the cheese in a mixing bowl. Add the onions, chilli, coriander, tomatoes, olive oil, lime juice and zest and then season. Stir well and allow to sit while you toast or griddle the ciabatta slices.

Spoon the cheese mixture over the toasted ciabatta slices and serve immediately, drizzled with extra olive oil if desired.
