  • 2 pieces Hass Avocado
  • 1 tbsp extra virgin olive oil
  • 100grams cherry tomatoes, halved
  • 4 slice sourdough, toasted
  • 100grams Lemnos Crumbled Fetta
  • 1/4 cup mint leaves, Finely Chopped
  • 1 piece red chilli, thinly sliced
  • 1 pinch salt, to taste
  • 1 pinch pepper, to taste

Method

Step 1 of 4

Using a knife, cut avocado in half around the seed. Remove seed. Scoop Avocado into a small bowl. Season with salt and pepper, to taste. Mash with a fork.

Step 2 of 4

Heat oil in a frying pan on high heat. Add tomatoes. Cook for 4 minutes, stir the pan occasionally, or until tomatoes soften.

Step 3 of 4

Spread avocado mixture over toasted sourdough. Add cherry tomatoes and crumbled Fetta. Sprinkle mint and chilli.

Step 4 of 4

Drizzle olive oil sparingly over top to serve.
