- 3 free range eggs, lightly beaten
- 95grams tuna in chilli oil, drained, reserving oil
- 1 cup long-grain white rice, cooked
- 1/2 cup carrot, shredded
- 2 spring onions, thinly sliced diagonally
- 1tablespoons kecap manis
Description
Combining two flavoursome dishes, this recipe will take your omelette game to the next level.
Method
Step 1 of 3
Heat a large non-stick frying pan over medium-high heat. Add half the reserved oil to the pan. Add egg and tilt pan to cover base with egg. Cook for 3 minutes or until set and golden underneath. Slide omelette onto a serving plate.
Step 2 of 3
Add remaining reserved oil to pan. Add rice. Cook, stirring, for 2 minutes or until heated. Add tuna, carrot and ¾ of the onion to pan. Cook, stirring occasionally, for 2 minutes or until combined and heated through.
Step 3 of 3
Spoon rice mixture onto 1 half of the omelette. Fold omelette to cover filling. Drizzle with kecap manis and sprinkle with remaining onion. Serve.
