- 1 medium white onion, peeled and finely sliced
- 3tablespoons plain flour
- 4tablespoons canola oil
- 1 pinch salt
- 1 pinch cracked black pepper
- 2 cloves garlic, peeled and crushed
- 4 medium eggs

Enjoy this easy to make, crunchy and lightly seasoned breakfast alternative for the whole family.
Method
Step 1 of 5
Prepare the sweet potato by peeled and grating and then combine with the finely sliced onion in a bowl.
Step 2 of 5
Now drain as much liquid from the mix as possible by squeezing in some kitchen roll.
Step 3 of 5
Add the rest of the ingredients to the bowl apart from the eggs and oil and combine together well. Heat up a pan to a medium heat with the canola oil.
Step 4 of 5
Divide your mixture into 4 patties and then using your finger, make a large hole in the centre of the patties. Fry the patties for 3 minutes on each side on the pan.
Step 5 of 5
Now flip the patty over again and crack an egg into each hole of the patty and fry for a further 6 minutes until the eggs are cooked before serving.
