  • 2 medium red onions, peeled and diced
  • 1teaspoons olive oil
  • 1teaspoons ground coriander
  • 1teaspoons smoked paprika
  • 1teaspoons cumin
  • 1 medium red capsicum, diced
  • 400grams black beans, canned
  • 4 large tomatoes, chopped
  • 4 large eggs
  • 4 tortillas
  • 1 large avocado, sliced
  • 1 bunch coriander
  • 2tablespoons lime juice

Description

Huevos rancheros make for a delicious and healthy breakfast or brunch dish.
Instruction tip
Serve with sliced jalapenos if you prefer a spicier dish.

Method

Step 1 of 4

Heat a large pan to medium high, add half the oil and half the onion and fry for 2-3 minutes, add the spices, diced capsicum and black beans (including the water) and fry for 2 more minutes. Cook for 15 minutes on medium heat until bubbling and slightly reduced.

Step 2 of 4

Make a quick salsa with the remaining diced onion, half the coriander, lime juice and chopped tomatoes.

Step 3 of 4

Add the remaining oil to a non-stick pan on medium heat and fry to your liking. Warm the tortillas for 30 seconds in the microwave.

Step 4 of 4

Place each tortilla on a plate, spread with the black bean mix, top with an egg, a spoonful of salsa and the sliced avocado. Scatter with chopped coriander and serve.
