  • 2teaspoons olive oil
  • 4 large eggs
  • 100grams spinach
  • 2teaspoons lemon juice
  • 120grams hummus
  • 1teaspoons chilli flakes
  • 1 pinch salt
  • 1 pinch cracked black pepper

Description

Hummus toast is the new avocado toast and it is perfect with a jammy boiled egg on top.

Method

Step 1 of 4

Brush the sourdough with oil and cook for 1-2 minutes on each side in a large frying pan on medium high heat. Remove from the pan and set aside.

Step 2 of 4

Add the lemon juice and spinach to the pan and cook on a medium heat until wilted. Season to taste.

Step 3 of 4

Place the eggs in a medium pan, cover with water and bring to the boil. Boil for 5-6 minutes, remove from the pan and add to a bowl of cold water for 2-3 minutes. Peel the eggs and slice each in half.

Step 4 of 4

Spread hummus on each piece of sourdough, top with spinach, boiled egg halves, chilli flakes and salt and pepper.
