Description

Poached eggs are simpler than they look to make and are the perfect topping for a more filling avocado toast.

Method

Step 1 of 3

Bring a large pot of water to the boil, add the vinegar and reduce to a simmer, gently bubbling. Crack an egg into a small cup or bowl and carefully drop into the pan. Repeat with the rest of the eggs. Poach for 2-3 minutes, remove with a slotted spoon and drain on kitchen paper.

Toast the sourdough to your liking. Mash the avocado in a bowl with a fork and add the lime juice. Mix the seeds together in a small bowl with the salt and pepper.

Step 3 of 3

Spread the avocado on each slice of toast, top with a poached egg and a sprinkle of seeds and serve.
