- 1tablespoons olive oil
- 1 large red onion, peeled and sliced
- 1 large capsicum, cored and sliced
- 2teaspoons fajita spice mix
- 400grams black beans, drained
- 200grams chopped tomatoes
- 4 medium eggs, beaten
- 2tablespoons butter
- 4 large wholemeal tortillas
Description
These simple scrambled egg and black bean burritos are delicious and filling and can be served warm or cold, wrapped up in foil for breakfast on the go.
Method
Step 1 of 3
Heat the oil in a large non-stick pan on medium heat and cook the onions for 5 minutes. Add the capsicums and fajita spice mix and cook for 5 minutes. Pour in the black beans and chopped tomatoes and cook for 5 minutes.
Step 2 of 3
Beat the eggs in a large bowl. Melt the butter in a large non-stick pan on medium heat. Pour in the eggs, let them sit for 20 seconds, then fold gently. Leave to sit for 15 seconds and stir again with a wooden spoon. Continue until the eggs are cooked but still runny in parts.
Step 3 of 3
Fill the middle of each wrap with black bean mix, top with scrambled egg, fold over the ends and roll up into a burrito.
