- 2teaspoons Cobram classic extra virgin olive oil
- 375grams Primo short cut bacon
- 8 free range eggs
- 1/4 cup milk
- 1 1/2teaspoons MasterFoods cafe-style everything eggs spice blend
- 1/2packets Mission original wraps 8-pack, warmed
- 60grams baby spinach leaves
- 1/4 cup MasterFoods barbecue sauce
Description
Start the day with a bang and a big bite of this deliciously easy brunch wrap that's packed with spinach, bacon and creamy scrambled eggs.
Method
Step 1 of 4
Heat 1 tsp oil in a large frying pan over high heat. Cook bacon, turning, for 5 minutes or until crispy. Transfer to a plate lined with paper towel to drain. Cover loosely with foil to keep warm.
Step 2 of 4
Combine eggs and milk in a medium bowl, then whisk with a fork until just combined. Add spice blend and whisk to combine.
Step 3 of 4
Wipe frying pan clean. Heat remaining oil in pan over medium heat. Pour in egg mixture. Using a wooden spoon, gently swirl eggs in the pan for 1-2 minutes or until just cooked. Remove pan from the heat.
Step 4 of 4
To assemble, top wraps with spinach, bacon and eggs, then drizzle with sauce. Roll up to enclose filling. Serve warm.
