Description

Cheese toasties get a flavour upgrade with the additional of spicy kimchi.

Method

Step 1 of 3

Mix the cheddar and mozzarella together in a bowl. Divide between 4 slices of sourdough.

Step 2 of 3

Top the cheese with kimchi and sliced spring onions and add the top slices.

Step 3 of 3

Brush the outside of each sandwich with a thin layer of mayonnaise. Cook the sandwiches for 2-3 minutes on each side in a pan on medium high heat, pressing with a fish slice to get a golden crust. Slice and serve immediately.
