- 1 crusty cobb loaf (cut into 8 slices)
- 2 apples (cored)
- 1/3 cup apple sauce
- 1/4 cup maple syrup
- 1/2 cup grated mozzarella
- 250grams herb-crusted roast pork, sliced
- 3 sprigs thyme (plus extra to garnish)
- 2/3 cup grated cheddar

Method
Step 1 of 3
Place maple syrup and thyme in a small frying pan over medium heat. Bring to a gentle boil. Remove from heat. Set aside for 5 minutes to allow flavours to infuse.
Step 2 of 3
Butter one side of each bread slice. Spread half the bread slices with apple sauce on unbuttered side. Top with pork, apple and combined cheeses. Sandwich together with remaining bread slices, buttered-side facing out.
Step 3 of 3
Heat a large frying pan or sandwich press over medium heat. Cook sandwiches 2 at a time, turning once, for 3-4 minutes on each side or until cheese has melted and bread is golden. Cut in half, drizzle over maple syrup, garnish with extra thyme sprigs and serve immediately.
