- 420grams Woolworths black beans no added salt, rinsed, drained
- 1 cup frozen peas, corn & capsicum
- 1 punnet 200g tomato medley, quartered
- 1 large avocado
- 1/3 cup lime chipotle dressing
- 1/4 bunch coriander, leaves picked
- 1packets original corn chips, to serve
Description
Whether you need a quick party appetiser or a tasty pre-dinner snack, this Tex Mex-inspired chunky dip-slash-salad lets the veggies do the talking, with creamy avocado, bright tomatoes, black beans, corn, peas and coriander.
Method
Step 1 of 3
Place beans in a serving bowl. Set aside.
Step 2 of 3
Place frozen vegetables in a heatproof bowl. Cover with boiling water. Stand for 2-3 minutes or until tender. Drain. Add beans to pea, corn and capsicum mix. Stir in tomatoes, then half of the avocado and gently fold to combine.
Step 3 of 3
Top with remaining avocado and drizzle with dressing. Sprinkle coriander over the top and serve with corn chips.
