- 1/4 cup cocoa powder, sifted
- 1/2 cup Woolworths maple syrup
- 1 cup white chia seeds
- 1L almond milk
- 3 small bananas
- 5milliliter extra virgin olive oil cooking spray
- 1/2 cup skinless hazelnuts, toasted, coarsely chopped

Description
Start the day right with super simple and filling chocolate and banana chia puddings. This creamy delight will become a brunch favourite.

Prepping tip:You can make this recipe up to a day ahead. Store covered in the fridge.
Method
Step 1 of 3
Whisk cocoa and 2 tbs syrup in a large bowl. Stir in chia. Add milk and combine. Cover and refrigerate for 6 hours or until chia is soft and mixture is thick.
Step 2 of 3
Meanwhile, cut bananas in half lengthways, then in half crossways. Spray bananas with oil. Heat a large frying pan over medium-high heat. Add bananas, cut-side down, and cook for 1 minute. Pour remaining syrup over bananas. Bring syrup to the boil and cook for a further 1-2 minutes or until bananas are caramelised. Cool.
Step 3 of 3
Press bananas, cut-side facing out, around the inside of 6 x 1 1/2-cup-capacity (375ml) glasses. Spoon chia pudding into glasses. Top with hazelnuts. Serve.
