  • 5milliliter extra virgin olive oil cooking spray
  • 200grams Thomas Dux triple cream brie, sliced
  • 3 free range eggs
  • 3/4 cup thickened cream
  • 2 peaches, cut into thin wedges
  • 1/4 cup Woolworths cranberry sauce
  • 1/3 punnet thyme, sprigs picked
  • 2tablespoons honey

Description

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a 20x30cm (base measurement) rectangular tart pan with removable base.

Step 2 of 3

Spray 1 sheet of pastry with oil. Working from the shortest edge of pastry, fold pastry in a fan-like pattern, then place at one end of prepared pan, folding in ends slightly to fit. Repeat with remaining pastry to cover pan. Place brie among folded pastry. Spray top with oil. Bake for 20 minutes or until golden-brown.

Whisk eggs and cream in a jug. Carefully pour over tart. Add peaches, then bake for a further 15 minutes or until set. Top with sauce. Sprinkle with thyme. Drizzle with honey. Serve.
