Dough
- 150grams soft butter
- 3 cup self raising flour
- 1/2 cup sugar
- 2 eggs
- 1teaspoons vanilla extract
- 1 lemon rind from one lemon
Filling
- 1kilograms ricotta
- 3/4 cup sugar
- 1 egg
- 1teaspoons vanilla extract
- 1 lemon rind
Description
A classic Spanish ricotta cake.
Method
Step 1 of 4
Mix all the ingredients listed in the filling to make the filling.
Step 2 of 4
For the dough, mix the butter, flour and sugar with your hands. Add vanilla and lemon, make a well and add two eggs in the middle. Add a little bit of warm water until the dough becomes solid.
Step 3 of 4
The dough should be soft, so be gentle. Add a layer of dough on the bottom, make sure it covers the edges. Then add the filling, and add a top layer of dough to cover the cake. Make sure the cake is sealed. Paint with one egg.
Step 4 of 4
Bake it in the oven at 180°C fan forced for approximately 30-35 minutes or until brown.
