  • 2 oranges
  • 150grams unsalted butter, chopped
  • 1/2 cup firmly packed brown sugar
  • 2tablespoons Woolworths golden syrup
  • 1 1/2 cups mixed dried fruit
  • 2 cups self-raising flour
  • 1teaspoons ground cinnamon
  • 1teaspoons mixed spice
  • 2 free range eggs
  • 1/4 cup brandy
  • 450grams ready rolled fondant
  • 4 store-bought dried orange slices
  • 2 sprigs rosemary
  • 4 glacé cherries
  • 1tablespoons white mini marshmallows
  • 1tablespoons icing sugar mixture

Description

Mixed dried fruit, cinnamon, citrus and mixed spice give this treasured Christmas fruit cake recipe a wonderful taste and aroma. It will certainly impress all your guests.

Method

Step 1 of 5

Preheat oven to 150°C/130°C fan-forced. Grease and line base and sides of a 22cm (base measurement) square cake pan with baking paper. Zest and juice 1 orange, then juice the second orange.

Step 2 of 5

Place butter, sugar, syrup, orange zest and juice in a medium saucepan. Stir over low heat for 2 minutes or until sugar dissolves. Add mixed dried fruit and cook, stirring, for 2 minutes or until combined. Increase heat to high and bring to the boil. Boil for 5 minutes or until fruit softens. Remove from heat and cool.

Sift flour, cinnamon and mixed spice over fruit mixture. Add eggs and stir to combine. Spoon mixture into prepared pan and smooth surface. Bake for 50 minutes or until a skewer inserted at centre comes out clean.

Brush top of cake with brandy. Wrap in foil and allow cake to cool completely in pan. Place cake on a serving plate.

Step 5 of 5

Place a layer of fondant over cake and trim edges. Using 3cm and 5cm star cutters, cut stars from leftover fondant. Arrange stars, dried orange slices, rosemary, glacé cherries and marshmallows on cake. Dust with icing sugar mixture. Serve.
