8 Ingredients

  • 2 cup mango sorbet, softened
  • 1 mango
  • strawberries
  • raspberries
  • 1 cup coconut, shredded
  • 2 cup berry sorbet
  • pineapple
  • 2 cup coconut and mango plantitude frozen dessert

Method

Step 1 of 4

Line a 6-cup loaf pan with a double layer of plastic, letting the sides overhang.

Step 2 of 4

Place half the coconut into the base of the pan. Spoon pineapple sorbet into pan over coconut and smooth. Top with half the remaining coconut and place back into the freezer for 20 minutes.

Step 3 of 4

Repeat layer using mango sorbet and remaining coconut. Return to freezer for a further 20 minutes. Spoon berry sorbet over coconut into pan. Smooth surface and cover with foil. Re-freeze overnight.

Step 4 of 4

Uncover loaf and turn out onto a serving plate. Remove plastic. Serve immediately with fresh fruit on top.
