Instruction tip
Tip:
When cherries aren’t in season, use 200g frozen pitted cherries instead.

Method

Step 1 of 4

Grease a 20cm (7cm deep) square cake pan. Line base and sides with baking paper.

Step 2 of 4

Reserve 1/2 cup cherries. Place remaining cherries with biscuits and juice in a large snap-lock bag. Using a rolling pin, break mixture into small pieces. Transfer to a bowl, reserving 1 cup of the biscuit mixture.

Step 3 of 4

Place choc melts and butter in a microwave-safe bowl. Microwave, uncovered, on medium for 2 minutes, stirring with a metal spoon every 30 seconds, or until melted and smooth. Add chocolate mixture to biscuit mixture in bowl and stir to combine. Press mixture over base of pan.

Step 4 of 4

Halve reserved cherries. Combine dark chocolate and oil in a bowl. Pour dark chocolate mixture over slice, spreading to cover, then scatter with reserved biscuit mixture, white chocolate and halved cherries. Refrigerate for 2 hours or overnight, if time permits, until firm. Cut into squares to serve.
