- 250grams potatoes, peeled, raw, grated
- 150grams plain flour, plus extra for dusting

- 250grams mashed potatoes
- 1 1/4 cup buttermilk

- 300grams chicken breast, skinless, boneless, chopped
- 2 large leeks, sliced
- 250grams chestnut mushrooms, sliced
- 3/4 cup chicken stock, hot
- 4tablespoons cream

Description
This Irish boxty is filled with a creamy chicken and mushroom sauce for a hearty and tasty main course option.
Method
Step 1 of 4
Place the raw potato in a clean tea towel, roll up tightly and wring out any excess moisture over the sink. Add to a bowl and stir in the flour, bicarbonate of soda and mashed potatoes.
Step 2 of 4
Stir in the buttermilk to make a thick batter and season. Heat half of the butter and oil in a large pan on medium heat and add enough batter to make a large pancake. Cook for 4 minutes on each side, carefully flipping on to a plate and then back into the pan. Repeat with the rest of the batter.
Step 3 of 4
Heat the rest of the butter in a large pan on medium heat and cook the chicken and leeks for 5-6 minutes. Add the mushrooms and cook for 3-4 minutes. Pour in the stock, bring to the boil, reduce the heat, stir in the cream and simmer for 2-3 minutes until thickened.
Step 4 of 4
Top each boxty with chicken and mushroom sauce, fold over and serve.
