  • 1tablespoons peanut oil
  • 2 cloves garlic , finely chopped
  • 1 large dried chilli, deseeded and chopped
  • 200grams minced pork
  • 40grams French beans, cut into 1 cm lengths
  • 1tablespoons Thai fish sauce
  • 30grams roasted peanuts, roughly chopped
  • 1tablespoons water
  • 2tablespoons light soy sauce
  • 1/4teaspoons caster sugar
  • 8 little gem leaves
  • 1 sweet chilli sauce (to serve)

Method

Step 1 of 2

Heat the oil in a large wok over a medium heat until the oil starts to shimmer. Add the garlic and dried chilli and stir quickly for a few seconds. Add the minced pork and stir-fry for 4-5 minutes until the meat has become golden.

Step 2 of 2

Add the French beans and cook for 1 minute, then add the fish sauce, peanuts, measurement water, soy sauce and sugar and cook for 1 more minute. Spoon into the lettuce leaves and serve with some sweet chilli sauce on the side.
