- 5milliliter extra virgin olive oil cooking spray
- 1 large brown onion, finely chopped
- 2 celery sticks, finely chopped
- 200grams white button mushrooms, sliced
- 1 large carrot, finely chopped
- 2 cloves garlic, crushed
- 1tablespoons smoked paprika
- 420grams no-added-salt brown lentils, rinsed, drained
- 400grams no-added-salt diced tomatoes
- 1/3 cup no-added-salt tomato paste
- 8 sheets filo pastry
- 1tablespoons sesame seeds
- 1tablespoons fennel seeds
- 1/4 punnet thyme, leaves picked

Description
Tuck into these golden, flaky pot pies filled with juicy pork mince, lentils and veggies. The nutritious pies make a wonderful midweek comfort meal and are good value.
Method
Step 1 of 4
Preheat oven to 200°C/180°C fan-forced. Grease 4 x 1 -cup ovenproof baking dishes and place on a baking tray. Spray pork with oil. Heat a large saucepan over medium-high heat. Add pork and cook, stirring to break up lumps, for 5 minutes or until browned. Transfer to a bowl.
Step 2 of 4
Add onion, celery, mushrooms and carrot to pan and cook, stirring, for 3 minutes or until almost tender. Add garlic and paprika and cook, stirring, for 30 seconds or until fragrant.
Step 3 of 4
Return pork to pan along with lentils, diced tomatoes and tomato paste. Bring to the boil. Reduce heat and simmer for 10 minutes, or until mixture thickens slightly. Remove from heat.
Step 4 of 4
Spoon pork mixture equally among prepared dishes. Roughly scrunch filo pastry sheets and arrange over top of pork to cover. Spray with oil. Sprinkle with sesame and fennel seeds. Bake pies for 5 minutes or until golden-brown. Remove from oven. Stand for 5 minutes. Serve sprinkled with thyme.
