  • 800grams tinned butter beans, drained, rinsed
  • 300milliliter chicken stock
  • 100grams diced tomatoes

Description

Butter beans stewed with bacon, potatoes, carrots and thyme make for a filling and comforting stew.

Method

Step 1 of 3

Place a large pan onto the stovetop setting it to medium-high heat for 1 minute. Add the diced bacon to the pan, cook for 5 minutes. Stir in the onions cooking for 1 minute.

Step 2 of 3

Add in the garlic for 30 seconds followed by the potatoes, carrots, thyme, beans, chicken stock and diced tomatoes to the pot.

Step 3 of 3

Let simmer for 20 minutes. Season and serve hot.
