- 2teaspoons cumin seeds
- 2teaspoons coriander seeds
- 2teaspoons fennel seeds
- 1teaspoons sweet smoked paprika
- 1tablespoons lemon juice
- 3tablespoons olive oil
- 2 cloves garlic , crushed
- 1 handful parsley, chopped, plus extra to garnish
- 500grams pork fillet, cubed
- 1 pinch salt
- 1 pinch pepper

Method
Step 1 of 3
Place the spice seeds in a spice grinder and crush to a fine powder. Alternatively, use a pestle and mortar. Tip into a bowl and mix together with the paprika, lemon juice, oil, garlic and parsley, then season with salt and pepper.
Step 2 of 3
Add the pork and stir until well coated. Cover and leave to marinate in the refrigerator for at least 2 hours and preferably overnight.
Step 3 of 3
Thread the pork on to 15 metal skewers. Heat a griddle pan until smoking hot, then add the skewers and cook for 10 minutes, turning frequently, until charred and just cooked through. Serve immediately scattered with extra parsley.
