  • 150grams Tassal Smoked Tassie Salmon
  • 375grams ricotta
  • 150grams feta
  • 1 lemon, finely grated rind of 1/2 lemon
  • 1/4teaspoons black pepper, coarsly ground (to season)
  • 1 cucumber, thinly diced
  • 1tablespoons capers, chopped
  • 1 cup coriander leaves, torn (0.25 cup)
  • 5milliliter olive oil, for drizzling
  • 1 bread stick, thinly sliced (to serve)

Method

Step 1 of 3

Use a fork to combine ricotta and feta add lemon rind and mix until roughly combined. Season with black pepper.

Step 2 of 3

Spread ricotta mixture onto a board or plate. Garnish ricotta mixture with Tassal smoked salmon, cucumber, capers, and coriander. Drizzle with olive oil and top with extra lemon rind.

Step 3 of 3

Enjoy easy entertaining when served with breadstick or biscuits!
