  • 375grams puff pastry
  • 3tablespoons ready-made pesto
  • 300grams yellow and red cherry tomatoes, halved
  • 150grams mixed antipasti, from a jar, drained, artichokes, roasted peppers, mushrooms and eggplant
  • 100grams goats' cheese, crumbled
  • 5-6 leaves basil (to serve)

Method

Step 1 of 3

Lay the puff pastry on a baking tray. Score a 2.5 cm margin around the edge and prick the base with a fork.

Step 2 of 3

Top with the pesto, cherry tomatoes, mixed antipasti and goats' cheese. Bake in a preheated oven, 200°C for 15-20 minutes.

Step 3 of 3

Top with the basil leaves and serve.
