  • 1teaspoons vanilla extract
  • 60grams reduced-fat dairy blend, at room temperature
  • 100grams dark chocolate, grated
  • 3/4 cup reduced-fat milk
  • 8 slice white bread
  • 4 eggs
  • 1/2 cup caster sugar
  • 1/2 cup raisins, chopped
  • 3teaspoons rum
  • 300milliliter light cream

Method

Step 1 of 4

Preheat oven to 180°C. Grease a 6-cup ovenproof dish.

Step 2 of 4

Spread both sides of bread with dairy blend. Combine chocolate and raisins in a bowl. Sprinkle chocolate mixture over half of the bread slices. Top with remaining slices and press down firmly. Cut each into 4 triangles. Arrange in prepared dish.

Step 3 of 4

Whisk cream, milk, sugar, eggs, rum essence and vanilla extract in a bowl. Carefully pour over sandwiches.

Step 4 of 4

Bake for 45 mins or until custard is set when tested in the centre with a skewer. Stand for 5 minutes. Sprinkle with icing sugar and serve.
