- 40grams butter
- 40grams plain flour
- 1 pinch mustard powder
- 1 1/3 cup milk
- 80grams cheddar cheese
- 1 pinch black pepper
- 2tablespoons truffle oil
- 1tablespoons chives, fresh, chopped

Description
Whole roasted cauliflower cheese with a hint of luxurious truffle makes an impressive vegetarian main dish.
Method
Step 1 of 4
Pre-heat the oven to 160°C/140°C fan-forced. Bring a large saucepan of water to the boil and add the whole cauliflower. Simmer for 10 minutes and drain.
Step 2 of 4
Heat the butter in a pan on medium heat and stir in the flour and mustard powder, mixing to make a paste. Remove from the heat, whisk in the milk slowly and place back on the hob. Cook, stirring all the time, until the sauce has thickened.
Step 3 of 4
Stir in 3/4 of the cheddar and season with black pepper. Place the cauliflower upright in a baking dish and drizzle with truffle oil. Pour over the cheese sauce and remaining grated cheese and bake for 25-30 minutes until golden and bubbling.
Step 4 of 4
Top with fresh chives and extra truffle oil and serve.
