Description
This delicious rice pudding is baked for the last 10 minutes so the frozen berries inside melt down to make a quick compote.
Method
Step 1 of 2
Add the rice, milk, 50g of sugar and vanilla extract to a large, heavy bottomed saucepan and bring to the boil. Reduce the heat and simmer for 18-20 minutes, stirring occasionally, until the rice is almost cooked through.
Step 2 of 2
Pre-heat the oven to 160°C. Stir the berries into the pudding mix and pour into an ovenproof dish. Sprinkle with the rest of the sugar, bake for 10 minutes until lightly golden and serve.
