Peach And Blueberry Yoghurt Cake

- 1 1/2 cup plain flour
- 1teaspoons baking powder
- 1/2teaspoons bicarbonate soda
- 60grams butter, softened
- 1 cup sugar
- 2 eggs
- 1/2teaspoons vanilla essence
- 1/2 cup greek yoghurt
- 410grams Woolworths tin peach , sliced and drained
- 170grams blueberries
- 1teaspoons caster sugar (for topping)

Description
I usually do this recipe with fresh peaches but decided to try it with my sample of tin peaches. I prefer it now using the tin peaches.
Method
Step 1 of 11
Use a springform cake tin.
Step 2 of 11
Preheat oven to 180°c.
Step 3 of 11
Grease the sides and bottom of the cake tin using butter or cooking spray. Line the bottom of tin with baking paper.
Step 4 of 11
Sift flour, baking powder, bi carb soda together in a separate bowl.
Step 5 of 11
In a mixing bowl beat butter, sugar and 2 eggs on high speed until very light and fluffy. This usually takes 2-3 minutes.

Add vanilla and Greek yoghurt and continue to mix until very creamy. This will take roughly another 2 minutes.
Step 7 of 11
Turn the mixer to low speed and add in the flour mixture until combined. Do not overmix.
Step 8 of 11
Transfer the cake batter into your prepared tin.
Step 9 of 11
Top with peach slices and scatter with blueberries on top in the spaces around peaches. Sprinkle the extra sugar on top.

Bake for 40 mins or until the cake turns golden and skewer comes out clean. Let it cool completely in tin on a baking rack.

When cool remove from the tin and place on a serving tray. Serve with cream.
