  • 130grams sultanas
  • 1 cup milk
  • 1/3 cup cream
  • 55grams light brown sugar, plus extra for sprinkling
  • 4 large eggs, beaten
  • 1teaspoons vanilla extract

Description

Bread and butter pudding is a staple Irish dessert and everyone has their own take on it. This simple and classic take is sure to please a crowd.

Method

Step 1 of 5

Butter on side of each slice of bread and slice in half diagonally.

Step 2 of 5

Arrange a layer of bread, butter side down, in a buttered baking dish. Scatter over half of the sultanas. Top with another bread layer and sprinkle the rest of the sultanas on top and finish with another bread layer.

Step 3 of 5

Whisk the milk, cream, sugar, eggs and vanilla together in a bowl and pour through a fine sieve over the pudding. Sprinkle with a layer of brown sugar.

Step 4 of 5

Cover and leave to stand for 1 hour to absorb the liquid. Pre-heat the oven to 180°C/160°C fan-forced.

Step 5 of 5

Place the pudding in a bain marie with enough water to come halfway up the side of the dish and bake, uncovered, for 40-50 minutes until just set.
