Maple & Cinnamon Apples
- 2 red apples, cored, sliced
- 1/2teaspoons ground cinnamon
- 1/4 cup maple syrup, plus extra to serve
Pancakes
- 2 cup self-raising flour
- 1 1/2 cup milk
- 1teaspoons vanilla extract
- 1/4teaspoons bicarbonate of soda
- 2 free range eggs
- 1/3 cup caster sugar
- 40grams butter, melted (save 20g for the topping)

Description
Top this fluffy pancake recipe with cinnamon apples, banana or any of your favourite pancake toppings. Don’t forget the maple syrup!
Method
Step 1 of 3
Sift flour and bicarbonate of soda into a mixing bowl. Stir in sugar, then make a well in the centre. In a large jug, whisk together milk, eggs and vanilla. Pour into well, then stir until smooth.
Step 2 of 3
Heat a frying pan over medium heat. Brush pan with a little butter, then pour ¼ cup batter into pan, carefully spreading to form a 12cm round. Cook for 2 minutes or until bubbles appear. Turn over and cook for 1 minute or until golden and cooked through. Repeat with remaining batter, brushing pan with butter when necessary, to make a total of 12 pancakes.
Step 3 of 3
To make the maple & cinnamon apples, melt butter in a small frying pan over medium heat. Add apple, tossing occasionally, for 5 minutes or until slightly golden. Add cinnamon and maple syrup, and cook for a further 1 minute or until apples are caramelised. Serve immediately with pancakes and extra maple syrup.
