Method

Step 1 of 5

Preheat oven to 180°C. Grease a 20cm cake pan and line the base.

To make the custard, whisk the custard powder and sugar together in a small saucepan. Gradually add the milk, whisking until smooth. Whisk over medium heat until custard boils and thickens. Remove from heat and whisk in butter. Place a sheet of plastic directly on the surface of the custard and set aside for 10 minutes to cool.

Beat butter and sugar together in a bowl until pale and creamy. Add eggs, one at a time, beating well after each addition. Sift flour and custard powder together over butter mixture and stir well until combined.

Spread half the batter in the pan. Remove plastic from custard and spread over batter. Spread remaining batter over. Bake for 35-40 minutes until golden. Cool in pan for 10 minutes. Turn out and transfer to a wire rack to cool completely.

Halve passionfruit and scoop pulp into a bowl (strain, if desired). Add the icing sugar and butter. Use a wooden spoon to beat until smooth. Spread over cake.
