Tropical Bliss Balls With Mango & Goji Berries

- 140grams dried mango
- 30grams goji berries
- 140grams cashew nuts
- 70grams desiccated coconut (reserve 10g to coat)
- 1tablespoons baobab powder
- 1/4teaspoons ground turmeric
- 1teaspoons rosehip powder
- 1 small lime, juice and zest
Method
Step 1 of 5
Place all the ingredients in a food processor and pulse until finely chopped.
Step 2 of 5
With the motor running, add 2-4 tablespoons of cold water a little at a time until the mixture starts to come together, forming a loose ball.
Step 3 of 5
Divide into 16 evenly sized portions and roll into balls.
Step 4 of 5
Sprinkle a layer of desiccated coconut on a separate plate and gently roll the balls to coat.
Step 5 of 5
Place in the fridge for 1 hour or freeze for 20 minutes to firm up before eating. Best served chilled, but fine popped in a lunchbox and eaten later in the day.
