  • 1 Lebanese cucumber, shaved into ribbons
  • 1/2 small red onion, thinly sliced
  • 1 baby cos lettuce, trimmed, leaves separated
  • 1teaspoons ground coriander
  • 1teaspoons ground cumin
  • 1 1/2teaspoons mild paprika
  • 1/2teaspoons ground turmeric
  • 400grams chickpeas, rinsed, drained
  • 200grams canned lentils, rinsed, drained
  • 1tablespoons lemon juice
  • 1/4 cup lemon juice
  • 1tablespoons tahini
  • 500grams pork scotch fillet steaks, thinly sliced
  • 4tablespoons olive oil (save 2 tbs olive oil )
  • 1/4 cup pine nuts, toasted
  • 1/2teaspoons sea salt flakes
  • 1 clove garlic, crushed

Description

Juicy pork and fresh hummus are an unbeatable combination. Add in fresh, crunchy salad and you've got a meal fit for The Avengers! You won't want to wait until after the credits, though.

Method

Step 1 of 4

Combine pork, paprika, coriander, cumin, turmeric and salt in a bowl. Thread pork onto skewers. Set aside.

Step 2 of 4

To make the hummus, process garlic, chickpeas, tahini, pine nuts, olive oil, lemon juice and 1/4 cup water in a food processor until smooth. Season to taste.

Step 3 of 4

Heat 1 tbs oil in a large frying pan or chargrill pan over medium-high heat. Cook skewers, turning occasionally, for 8-10 minutes or until slightly charred and cooked through.

Step 4 of 4

Meanwhile, toss lentils, onion, cucumber, lettuce, remaining oil and lemon juice in a bowl to combine. Season to taste and serve with pork skewers and hummus.
