  • 3/4 cup plain flour
  • 250grams green prawn meat (finely chopped)
  • 1/3 cup finely grated parmesan
  • 2/3 cup whole egg mayonnaise
  • 4 free range eggs (lightly beaten)
  • 1L vegetable oil (for deep-frying)
  • 500grams microwave brown rice
  • 1 1/2tablespoons pickled jalapeño (finely chopped)
  • 1 1/2 cup panko breadcrumbs

Method

Step 1 of 5

Combine prawn, rice, parmesan, 1/4 cup flour and half the egg in a large bowl. Stir well to combine and season.

Step 2 of 5

Half-fill a deep-fryer or saucepan with oil and heat to 180°C (it’s ready when a cube of bread turns golden in 30 seconds).

Step 3 of 5

Meanwhile, place remaining flour, remaining egg and breadcrumbs into separate bowls. Using damp hands, firmly form rice mixture into rounds to make 18 small arancini.

Step 4 of 5

Lightly coat each arancini in flour, then in egg, and then roll in breadcrumbs to coat. Deep-fry, in 3 batches, for 8 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towel.

Step 5 of 5

Meanwhile, combine jalapeño and mayonnaise in a bowl with 2 tsp water. Season to taste and serve with arancini.
