- 1 cup water
- 100grams white sugar
- 3 ripe Conference pears, peeled and cut into quarters
- 150grams Parma ham, thinly sliced
- 15milliliter chilli oil, to serve

Method
Step 1 of 2
Put the sherry, water, and sugar in a pan and bring to the boil. Add the pears, return to the boil, and simmer gently for 15 minutes, or until they are beginning to soften. Turn off the heat and allow to cool for 30 minutes.
Step 2 of 2
Wrap each piece of pear in a piece of ham. Arrange on a serving plate and serve drizzled with chilli oil, or mint yoghurt.
