Overnight Oats, Yoghurt & Berry Parfaits

- 1/3 cup caster sugar
- 1/2 lemon, juiced

- 2 cups traditional rolled oats
- 1 cup milk
- 1teaspoons vanilla extract
- 2 1/2 cups Woolworths Greek-style yoghurt
- 2tablespoons pepitas & sunflower seed mix
Description
Prepare overnight oats in the evening for a delicious breakfast that's ready to go the next day. Pepitas and sunflower seeds add a wonderful crunch.
Method
Step 1 of 4
Place sugar, lemon juice and 2 tbs water in a medium saucepan over medium heat. Cook for 3 minutes or until sugar has dissolved. Add berries. Bring to a simmer. Reduce heat to low and simmer, uncovered, for 4 minutes or until berries have softened. Remove pan from heat and set aside for 30 minutes to cool.
Step 2 of 4
Transfer half of the berry mixture to a blender and blend until smooth.
Step 3 of 4
Combine oats, milk, vanilla and 1 1/2 cups yoghurt in a large bowl. Add blended berry mixture to oat mixture, stirring to combine. Cover and refrigerate overnight.
Step 4 of 4
Spoon half of the oat mixture among 4 x 1 1/4-cup capacity glasses. Top each with 2 tbs of the remaining yoghurt and half of the remaining berry mixture. Divide remaining oat mixture among glasses. Top with remaining yoghurt and berry mixture. Scatter over seeds and serve.
