For the balsamic dressing
- 1tablespoons balsamic vinegar
- 1teaspoons wholegrain mustard
- 1teaspoons honey
- 3tablespoons olive oil
- 1 pinch salt
- 1 pinch pepper
- 1 large cucumber, halved lengthways, deseeded and thinly sliced
- 250grams strawberries, halved or quartered if large

Method
Step 1 of 3
Put the cucumber slices and strawberry halves or quarters in a shallow bowl.
Step 2 of 3
Put all the dressing ingredients in a screw-top jar, season to taste with salt and pepper, and shake well.
Step 3 of 3
Pour the dressing over the cucumber and strawberries. Toss gently, then cover and chill for 5-10 minutes before serving.
