- 1tablespoons continental parsley, chopped
- 1/2 cup cream
- 1 pinch freshly ground black pepper
- 500grams spaghetti
- 130grams parmesan, shaved
- 1teaspoons olive oil
- 3 eggs
- 200grams pancetta, sliced

Step 1 of 6
Cook spaghetti in a large pot of boiling salted water until al dente.
Step 2 of 6
Meanwhile, heat oil in a fry pan and sauté pancetta until crisp. Drain on absorbent paper.

Combine half the parmesan with the eggs and cream and lightly beat with a fork.
Step 4 of 6
When cooked, drain pasta, reserving 1 cup of cooking liquid.
Step 5 of 6
Quickly toss hot pasta with egg mixture, stirring until just set and adding a little cooking liquid if needed.

Stir in pancetta and parsley, spoon into bowls and serve sprinkled with pepper and remaining parmesan. Note: Al dente is pasta which is cooked to be firm to the bite.
