  • 1tablespoons cornflour
  • 7 rasher lean shortcut bacon, sliced thinly (approx. 100g)
  • 1 medium onion, sliced thinly
  • 2 cup mushrooms, sliced thinly
  • 2 skinless chicken breasts, sliced thinly (approx. 400g)
  • 2tablespoons parmesan cheese, grated
  • 375grams fettuccine
  • 5milliliter canola cooking spray
  • 2 cup baby spinach (about 40g)

Method

Step 1 of 3

Cook pasta according to directions on packet, drain and keep warm.

Meanwhile, heat a large frying pan, spray with oil; add chicken and cook for 5 minutes or until browned and cooked through. Add bacon and onion, cook 3 minutes; then add mushrooms and cook a further 1 minute.

Step 3 of 3

Blend cornflour with 1/4 cup (60ml) evaporated milk. Add to frying pan with remaining milk, stirring constantly until the sauce boils and thickens, stirring, add pasta and baby spinach; toss through. Sprinkle with cheese. Serve immediately.
