  • 50grams speck, diced
  • 2 cups green salad (to serve)
  • 2tablespoons extra virgin olive oil
  • 50grams parmesan cheese, freshly grated
  • 1 pinch freshly ground black pepper, to taste (to taste)
  • 200grams spaghetti pasta
  • 2 free range eggs, at room temperature (at room temperature)

Cook the pasta in a large pan of boiling salted water until al dente.

Meanwhile, heat the oil in a pan and fry the speck until crisp. Lightly beat the eggs in a large bowl with the grated cheese and pepper.

Step 3 of 3

Drain the pasta and reserve 1/4 cup cooking liquid. Add pasta to the pan with the speck. Toss to coat. Take off the heat. Then add the egg and cheese mixture and reserved cooking liquid. Toss to coat the pasta, season with freshly ground black pepper. Serve immediately with a green salad to the side. Tip 1: For gluten, dairy free version swap the spaghetti for 4 zucchinis, thinly sliced into long matchsticks and oil for coconut oil, parmesan for cashew nut cheese finishing with a little lemon zest. Tip 2: You can substitute the spaghetti for any other long pasta such as fettuccine or long macaroni. Tip 3: Swap speck with pre chopped bacon from the deli counter.
