Description

A trio of cheeses takes this classic Italian pasta to the next level. This creamy carbonara recipe with ricotta, parmesan and cheddar will be your new go-to.

Method

Step 1 of 4

Cook pasta in a saucepan of boiling, salted water for 8 minutes or until al dente. Drain.

Step 2 of 4

Meanwhile, heat oil in a large deep frying pan over medium-low heat. Cook bacon, stirring occasionally, for 5 minutes or until golden and crisp. Remove from heat.

Step 3 of 4

Whisk two-thirds of the parmesan cheese, egg yolks and cream in a jug until combined.

Step 4 of 4

Add pasta, egg mixture, tasty cheese and ricotta to bacon. Cook, tossing constantly, over medium-low heat until sauce thickens and cheese melts. Season. Serve sprinkled with parsley and remaining parmesan.
